      Destined to be a favorite, de Laurentiis' eleventh cookbook walks the tightrope between indulgent and healthy in a great way. The 100-plus dishes make the case for using authentic ingredients (no fake ricotta), not wasting leftovers, incorporating textures and condiments, and recognizing that salad can be king in a balanced diet. Moderation in everything is de Laurentiis' mantra as she lays out the well-known factors of healthy living, including sleep, exercise, and even the genetic factor. If all that's old hat, skip the beginning and plunge into the recipes, divided into the usual categories: starters (Caesar aioli), cocktails and apps (crunchy roasted butter beans), soups and main-course salads (green gazpacho), pasta (layerless sheet pan lasagna), poultry and meat (chicken piccata meatballs), fish and shellfish (cioppino), meatless mains (polenta with braised mushrooms), sides (crispy smashed veggies with parmesan), and of course, dolce (cannoli rice pudding). The author's commentary at the beginning of chapters and recipes is chatty, personal, and filled with good cooking advice. This title sets up great expectations--and fulfills them.
